This is not your Grandmother’s sherry. While many of us still think of the sweet cream sherries that were popular a generation ago, there is so much more to discover in the Tio Pepe collection. Since its foundation in 1835, this family owned company has been dedicated to the art of making fine Sherry and Brandy, for which it has won worldwide recognition.
Fino sherries, which are made from the Palomino grape and are dry, light and elegant with an almond flavour and are the perfect accompaniment for salty olives, tapas and shellfish. Amontillado and Palo Cortado sherries start their life as Fino but lose their layer of flor and have a second, oxidative aging phase that brings out a nutty, umami flavour. Sherries that include Pedro Ximenez grapes are sweeter and are dark unctuous wines that are best suited for dessert.
Tio Pepe En Rama 2016 marks the 7th edition of Tio Pepe in its purest state and the most widely distributed yet. Tio Pepe En Rama is a selection of 60 casks from the Tio Pepe solera, unfiltered and unclarified, only bottled once a year in spring when the flor is at its healthiest.
For almost two centuries Tio Pepe cellar masters have used the 'Palma' chalk mark system in their bodega. Traditionally the Palma mark was used on barrels to indicate wines of exceptional finesse and delicacy of aromas. The more Palmas on the barrel, the greater the maturity of the wine. Cuatro Palmas is an extremely rare old sherry, having aged for more than 4 decades in the last four casks of the 'Museo Solera'. All Palma sherries are bottled 'En Rama' without filtration or clarification.
