Brothers Bernard and Jean-Christophe Vallet are only the fourth generation to run Pierre Bourée Fils since 1864, and produce classic red Burgundy with fine keeping potential, neither densly coloured nor heavy, but gently extracted wines with a remarkable spicy, floral, and savoury range that can develop beautifully into a true bouquet and 'queue de paon', a Burgundian term for a finish spreading like a peacock's tail. Balance, finesse, and aromatic subtlety are the criteria here, rather than weight and power.
It is rare in Burgundy to find equal mastery of red and white wines, but Bernard Vallet is a brilliant vinifier of both. Traditionally known for their red wines (unsurprisingly since Bourée’s cellars are in Gevrey-Chambertin), their white Burgundies have become equally outstanding since Bernard Vallet, Pierre Bourée’s great-great-nephew, took control of the winemaking, given his aptitude and passion for white Burgundy.
