For almost two centuries Tio Pepe cellar masters have used the 'Palma' chalk mark system in our bodega. Traditionally the Palma mark was used on barrels to indicate wines of exceptional finesse nd delicacy of aromas. The more Palmas on the barrel, the greater the maturity of the wine. Fino Tres Palmas is a fine and rare sherry selected from a single cask of 10 year old Tio Pepe. Aged through the traditional Solera system and bottled 'En Rama' without filtration or clarification
The NV Fino Tres Palmas is pushing biological aging to the limit, with 10 years under flor, getting close to an Amontillado, with a light brown color and a nose of hazelnuts intermixed with the marine and saline notes. It reminds me of varnished wood, with a very sharp palate, intense and complex. The flavors stay in your mouth for minutes, no doubt helped by its 16% alcohol. This is a selection of four barrels I’d call Fino Amontillado. Drink 2013- 2020.
