Sustainable highland craft red wine from D.O. Sierras de Malaga/Serrania de Ronda, the Spain's southernmost winemaking region. This highly-flavoured wine is a fantastic blend of grapes: Petit Verdot (60%), Cabernet Saivignon (30%) and Shiraz (10%). This vintage was harvested in October, giving the grapes every chance to ripen perfectly. Following the alcoholic fermentation, we allowed a long post-fermentation in order to maximise the extraction. Thus the ageing process in barrels was balanced by a powerful malolactic fermentation stage. After 12 months in French oak barrels, the wine spent 12 months more in the bottle, enabling us to introduce it to the market at its moment of perfection.
Colour: Red cherry, with hints of violet. It has a large, genrous “teardrop”. Nose: The wine itself brings suggestions of herbs and spices (liquorice, cloves), and the ageing process has introduced a soupçon of oak and balsamic, toasted aromas. Mouth: This is a well-balanced, full-bodied wine.
