Premium biodynamic highland craft red wine from D.O. Sierras de Malaga/Serrania de Ronda, the Spain's southernmost winemaking region. The most southern Pinot Noir (100-percent) in Europe. 12 months of ageing "sur lie" with "batonnage" (on natural fine lees, which is raised at regular intervals during a period of time between 2 - 6 months) in French oak barrels. Climatology: A very cold spring, with temperatures almost every morning -8. The outbreak was late March. Late April, with snow in the surrounding Sierras. The Flowering took place in the last week of May. The harvest began in September and was completed in mid-October.
Colour: Dark Cherry Red Nose: Luscious red fruit (mulberry, cherry), fine cocoa with hints of spices (pepper, clove). Mouth: Generous, fleshy, dry and vital acidity. Sensations of coffee notes, gingerbread and cocoa with bitter chocolate. Creamy and balsamic finish. Lengthy on the palate with a very ellegant terroir.
