For almost two centuries Tio Pepe cellar masters have used the 'Palma' chalk mark system in our bodega. Traditionally the Palma mark was used on barrels to indicate wines of exceptional finesse nd delicacy of aromas. The more Palmas on the barrel, the greater the maturity of the wine. Fino Dos Palmas is a selection from just two very old Tio Pepe Casks, aged for 8 years under flor through the traditional solera system. It is bottled 'en rama' with out filtration or clarification.
"The NV Fino Dos Palmas 2015 release is selected from two botas from the third criadera of the solera Amontillado Fino that average eight years of biological aging. There is one extra degree of complexity and depth, as you increase the average age of these finos, while they get sharper and more pungent flavors.
